Chocolate Chip Banana Bread

Cook Time: 30 mins – 1 hour

Yields: 12+ muffins or 1 large loaf of bread

Ingredients:

  • 1 stick of butter

  • 1 cup of sugar or 1 cup of packed brown sugar

  • 2 eggs

  • 3 very ripe, mashed bananas

  • ½ tsp salt

  • 1 tsp baking soda

  • 1 tbsp of vanilla extract (if not using vanilla protein powder)

  • 1 ¼ cups of flour — OPTION: sub ½ a cup of flour for vanilla protein powder!

  • 1 cup of chocolate chips

Instructions for the Chocolate Chip Banana Bread:

  1. Preheat the oven to 350 degrees (F)

  2. Cream together butter and sugar for 5 mins at min

  3. Stir in 2 beaten eggs, vanilla (if not using protein powder) and 3 mashed bananas

  4. Slowly mix in the dry ingredients (flour, baking soda, salt) 

  5. Fold in chocolate chips (as many as you like, but probably at least 1 cup!)

  6. Grease and flour bread tin or muffin tins

  7. Spoon into muffin tins or pour batter into a bread loaf tin

  8. Muffins = bake 30-50 minutes – put a toothpick in and if it comes out clean, they are finished, if it still has batter on it, bake more in 5 minute intervals

  9. Bread loaf = bake 1 hour – 1 hour 20 mins

This chocolate chip banana bread can be made for breakfast or dessert! I try to make this any time my bananas have started going bad in my house. I’ve made it as a double chocolate banana bread (sub 1/2 of cup of flour for cocoa powder), muffins or bread. You can make it healthier by subbing some of the flour with protein powder as well!
