Chocolate Chip Banana Bread

Yields: 12+ muffins or 1 large loaf of bread
Ingredients:
1 stick of butter
1 cup of sugar or 1 cup of packed brown sugar
2 eggs
3 very ripe, mashed bananas
½ tsp salt
1 tsp baking soda
1 tbsp of vanilla extract (if not using vanilla protein powder)
1 ¼ cups of flour — OPTION: sub ½ a cup of flour for vanilla protein powder!
1 cup of chocolate chips
Instructions for the Chocolate Chip Banana Bread:
Preheat the oven to 350 degrees (F)
Cream together butter and sugar for 5 mins at min
Stir in 2 beaten eggs, vanilla (if not using protein powder) and 3 mashed bananas
Slowly mix in the dry ingredients (flour, baking soda, salt)
Fold in chocolate chips (as many as you like, but probably at least 1 cup!)
Grease and flour bread tin or muffin tins
Spoon into muffin tins or pour batter into a bread loaf tin
Muffins = bake 30-50 minutes – put a toothpick in and if it comes out clean, they are finished, if it still has batter on it, bake more in 5 minute intervals
Bread loaf = bake 1 hour – 1 hour 20 mins
This chocolate chip banana bread can be made for breakfast or dessert! I try to make this any time my bananas have started going bad in my house. I’ve made it as a double chocolate banana bread (sub 1/2 of cup of flour for cocoa powder), muffins or bread. You can make it healthier by subbing some of the flour with protein powder as well!
