One Pot, Creamy, Cajun Chicken Pasta

If you don’t like this Cajun Chicken Pasta, you either can’t handle a little spice or you’re a communist, it’s that good.

Cook Time: 15-30 mins

Yields: 4 servings

Ingredients

  • 1 chicken breast or 3 boneless skinless chicken thighs, chopped into diced / cubed (will yield 4 portions)

  • 1 bell pepper diced – I prefer red, but any variety works

  • 1 medium sized onion diced

  • For children or your general health, you can sneak in extra vegetables like zucchini or broccoli

  • 1/2 – 3/4 bag of egg noodle pasta or 2-3 cups of penne

  • 2-3 cups of beef or chicken broth (roughly 3/4-1 cup of broth: 1 cup of pasta)

  • 1/4 cup of milk or heavy cream

  • 1 cup of shredded cheddar

  • 1-2 tablespoons of Cajun seasoning

  • Salt / Pepper to taste

  • Green onion for optional topping

  • Sour cream for optional topping

Instructions

  1. In a deep skillet, sauté the onions and peppers in a tablespoon of olive oil or butter. Once the onions begin to brown, stir in the chicken to brown. Stir in the cajun seasoning and add a pinch of salt and pepper while browning the chicken in the skillet.

  2. After the chicken is browned and mostly cooked (doesn’t have to be fully cooked just yet), add the pasta to the pan and pour in the beef or chicken broth. Allow the broth to come to a boil and start cooking the pasta while stirring occasionally.

  3. Once the pasta reaches an “al dente” or almost cooked taste to you (think you can eat it but it’s not quite ready yet) pour in the heavy cream and add the cheese. Stir more continuously to mix in cheese and make sure that cream doesn’t curdle. Once the pasta is cooked to your liking, you’re ready to serve!

  4. Add on green onions or put a dollop of sour cream on top and serve!
