Lime, Cinnamon Basil Sugar Cookies

Yields 24 cookies
Ingredients:
2 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. Salt
2/3 cup butter – room temperature or slightly chilled
1 cup sugar
1 large egg
1 tsp. vanilla extract
2 small limes zested (3tbsp)
5 tbsp. chopped fresh cinnamon basil
Optional: caster sugar, powdered sugar, sugar pieces or other to roll cookie in
Instructions:
Cream together butter and sugar. The butter shouldn’t be hard to touch but should still be cold so that the cookies stay fluffy.
In a separate bowl mix together flour, baking powder and salt and set aside.
Mix into butter and sugar the vanilla extract, egg, lime zest and fresh chopped basil. Mix well, should be very pale yellow in color.
Slowly incorporate the dry ingredients until dough consistency.
Refrigerate at least 30 mins, better to be 1 hour before baking.
Spoon 1” balls of cookie dough onto a greased pan 2” apart. Flatten the tops of the cookies as they don’t spread much while baking.
Option to sprinkle sugar or add sugar cube chunks like I did!
